This is an Organic Colombia Huila from the Asociación del Bombo A group of 100 family farms working together to grow better coffee and skip the commodity market entirely. They built their own cupping lab so every harvest gets scored, which means every decision about picking and fermentation is data-driven, not guesswork. The farms sit high in the mountains near Pitalito, on clay mineral soils that give the coffee real complexity. You'll find it clean and balanced with good body the kind of coffee that rewards paying attention to it.
Tasting notes and observations: Light roast keeps the origin bright and you get that lemony floral pop with toasted walnut and herbal spice, so you really taste where the coffee comes from. Medium roast is the sweet spot for most people; it smooths out and gets creamier with chocolate and nutty flavors that are easier to enjoy. Dark roast is for someone who wants body and boldness that is heavier, semi-sweet, with smoke and baker's chocolate. For this coffee we recommend a medium or medium-dark; that's where the farm's work really shines.
